1. coat a hot skillet with meled butter, add the fresh Prince Edward Mussels to the skillet and cover.... The steam will cook the mussels, along with the heat of he pan.... It will take 1 minute to cook the mussels.... You'll know when they are done as they being to open... next add into the pan 4 oz.. chopped onions, 2 oz. chopped garlic and 4 oz. chopped tomatoes, and fresh basil.
2. Deglaze the pan with 2 oz. of Sambuca (licorice flavor liquor) let the alcohol cook off, then add melted lemon butter to the pan. serve all the contents of the pan in a bowl, and top with fresh chopped parsley... sit back and enjoy with a nice baguette of bread... yummy!!!!
