Ingredients

  • 2 tablespoon vegetable oil
  • 2 pounds chuck steak, cubed half inch
  • 1 pound hot italian sausage
  • 1 large onion , chopped
  • 6 cloves garlic , minced
  • 1 tablespoon chili powder
  • 1 tablespoon paprika
  • 2 teaspoons cumin
  • 1 can diced tomatoes with juices, 28 ounce can
  • 1 cup water
  • 1 can pinto beans, 15 oz drained
  • 1 can cannellini beans, 15 oz drained
  • 1 can kidney beans, 15 oz drained
  • kosher salt
  • pepper

Directions

1. In a large soup pot heat the oil. Salt and pepper the chuck steak and brown in the oil. Remove the chuck steak and brown the sausage, breaking it into small pieces. Remove from pot.
2. Add onion and cook until tender about 4 minutes. Add the garlic and cook for two minutes. Stir in the chili pepper, paprika and cumin and add the meats. Cook about one minute and then add the tomatoes and water. Cover and cook over moderately low heat for 30 minutes.
3. Add the beans and simmer uncovered for 30 minutes. Season with salt. Serve with cheese, scallions, sour cream and cilantro.
